I want to share with you recipes I've found and recipes I've created with low fat and sometimes, low sodium ingredients. You don't have to skimp on flavor with these recipes. I hope you'll enjoy them as much as we do.

Diana's Low~Fat Couscous Salad
1 (5) oz. box of Far East Couscous, mixed with 2 1/2 tbls grated Parmesan Cheese and 1 tsp garlic powder or you can use the Parmesan Cheese flavored box and use the flavor packet inside.
1/3 cup red or white onion chopped fine
1/3 cup of cucumber with the seeds removed, chopped fine
1/3 cup of chopped tomatoes
1/3 cup of bell peppers, chopped fine
Dressing: 1/4 cup of olive oil, 4 tsp lemon juice, 2 tbls dried dill weed, 1 tsp garlic powder
Mix together and let sit while cutting vegetables.
Cook the Couscous as directed on the package but don't add the Parmesan Cheese flavor packet. Cool to room temperature. Add the Parmesan Cheese packet or your own 2 1/2 tbls grated Parmesan Cheese and 1 tsp garlic powder. Fluff with a fork and place in a large bowl with vegetables. Mix well with the
dressing and refrigerate for 1 hour or more.
